Overnight Oats

 
 
This is the first time I have made overnight oats and they were so delicious I will definitely be making them again. I usually make a smoothie with my oats (I will post that recipe another time) But here is my Overnight Oats recipe:
 
3/4 cup Greek yoghurt
2 Tbs Chia seeds
2/3 cup Oats
1/2 cup milk (I use unsweetened almond milk)
Mix altogether in a bowl
Cover the oats and let them sit in the fridge overnight
In the morning stir and add some more milk to the consistency you like
Add to the oats toppings of your choice...
Cooked apple pieces or apple sauce
Nuts
Nut butter
Strawberries, blueberries
Sultanas
Figs
Pepitas, sunflower seeds
I added cinnamon, natvia, banana and a drizzle of honey and more chia seeds...Yum

Wow I can't beieve it's the middle of January already!! I have been MIA, as lots has been happening in the holiday break, and I have been focusing more on nutrition and exercise, 2013 is the year for change in my life!!
I hope to backtrack some blog posts to Nov 30 from Charlies first birthday celebrations...
Looking forward to Jack starting Kindergarten this year which is 3 full days!! He really needs it, it's rather difficult keeping him occupied at home so I can get anything done. I didn't realise How much I enjoyed/appreciated having 2 mornings a week when he was at early learning. It will also be nice to spend more time with just Charlie, although I have a feeling he is going to miss Jack.
I have also had trouble uploading photos to my blog but Mr Miller has shown me a way to do it...
